How come pro get charged $5 event fee and AM done?

The $5 Am fee comes from the difference between the retail and wholesale price of their payout

No added mandos. We are playing the courses all natural this year

Is there any way to play both flex events at South Hills and Coleman this day? Or can you only do one?

You should be able to play both. The courses are only 15-20 minutes apart at most. It's a flex start so you can tee off whenever you are ready and the first tee pad is clear
