Now that all the slots are full, is it possible to switch from Novice to Recreational? If not, that's ok. It was suggested that I'd get more out of playing with more experienced folks. It's my first tournament so I could go either way.

No, because you still get a minimum $120 player pack

Ah, didn't notice that a bag came with the players pack, nice! Do you know if we'll have to wear masks while we play?

A mask will be required around tournament central. Once you are at your holes you do not need a mask but need to follow social distancing.
